Antioxidant Orange Blast Smoothie


Makes 2 Servings

  • 1 sweet potato, cut into 1 inch thick slices, peel on to retain the nutrients
  • 1 papaya peeled and seeded
  • 2 mandarin oranges, peeled
  • Half a carrot
  • 1 slice of pinapple
  • 1 cup coconut water

Steam the sweet potato for 7 minutes, and when done steaming peel the skin off.  The skin should come off easily, and the potatoes should be soft enough to mash.  You can eat it raw, but it is hard to digest and is one of the few vegtables that is actually better for you when cooked.   Add in the rest of the ingredients and mix with a high speed blender.

This is a wonderful smoothie to have for a mid day snack, it is full of antioxidants, vitamin C and A and full of fiber to tide you over until dinner.  (which is why I’m drinking it right now!)  Coconut water is better at replacing electrolytes then any sports drink, with way less sugar and no artificial dyes.  Plus it is chock full of nutrients.
