My mom is coming into town this week, so I’m not sure how much I”m going to get to write. She’s flying all the way from NJ today and I’m very excited to cook with her and share all the wonderful things I’ve learned. We plan on going to the local farmer’s market this week, and making vegan eggplant parm since we both love that dish so much!
