Raw Sesame Ball Bites

sesame ball bites If you like halava you will love this recipe! I broke my food processor when I made my Chocolate Pistacio  snack balls.  It was a sad day.  But all is well now!   My new one came yesterday and its way better then my old one!   Everything always has a silver lining, lol.

These are naturally sweetened, healthy, and totally raw! And if your balls come out more like logs, its okay, no one is judging…right??  LOL

Sesame Ball Bites:

  • 6 medjool dates, pitted
  • 2 cups almond flour
  • 1/2 cup tahini
  • 1 tbsp maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup chia seeds
  • 1/3 cup sunflower seeds
  • toasted sesame seeds for the outside

Put everything in a food processor except the toasted sesame seeds.  Pulse until everything is nicely mixed and grated up.  Take the “dough” and roll it in your hands into palm sized balls.  Roll in the toasted sesame seeds.  Put them in the freezer for 15 minutes to set, and enjoy!

Garlic Dill Spinach Noodles with Mushrooms and Onions (Gluten-free, Vegan)

Vegan Alfredo

 

  • 2 Packages of Gluten Free Spinach soy noodles cooked according to the package instructions and drained well.  (This is a good brand, I also like the ones in the water that only need to be soaked. – http://www.celiac.com/glutenfreemall/pasta-company-glutenfree-spinach-fettuccine-pasta-frozen-unit-p-2296.html)
  • 1/2 cup Cashew Sour Cream (Recipe here – you need to make it really thick, just add less water when blending it up)
  • 2 crushed garlic cloves, let sit for at least 10 minutes
  • 2 tbsp dry dill weed (or 4 tbsp fresh)
  • 1 tsp salt
  • 2 tbsp vegetable stock
  • 1 package crimini mushrooms, sliced thin
  • 1/2 onion, diced
  • Fresh parsley

In a blender, take the cashew sour cream, the garlic, dill and salt, and blend it up until its nice and smooth and there’s no garlic chunks.  In a sauce pan, saute the mushrooms and onions, covered, in the stock for 2 minutes.  Uncover it and cook it for one more minute.  Mix the noodles with the garlic cashew cream, then place the mushroom and onions on top.   Garnish with fresh Parsley.

 

 

Why You Should Visit a Farmer’s Market

Yesterday I went to the farmer’s market with my mom and my cousin.  I had the best juice ever.  They always surprise me by what they include in their juices.  This time I had Juice 1, which ingredients included: Wheatgrass, baby bok choy, chard, carrot, apple, mint and basil.   I don’t put baby bok choy or chard in my smoothies ever.  It was surprisingly sweet, I believe from the chard.  My mom got Juice 2, which was wheatgrass, spinach, ginger, apple and lemon.  A more basic juice, the kind I would normally make at home in a smoothie (without the wheatgrass, because I don’t have the machinery to  do that).

Zive Juice always surprises me with their ingredients and its always the first booth I stop at at the farmer’s market.  They use the produce fresh from the local farms and I’m very proud to support everyone in my community.  Especially those growing non-GMO organic food.  They even recognize me now!   Last time I got a juice, they had put artichoke hearts into it.  I tried to make it at home into a smoothie, but using artichoke hearts was just way too much work for me, and I’ll gladly pay Zive Juice to do all that hard work for me instead of doing it myself at home!

Farmer’s markets are a wonderful way to get to know your farmer’s, to get to know where your food comes from, and to see how its being used in local businesses.    Farmer’s markets are popping up EVERYWHERE.  If you can’t grow your own food, this is the best way to get fresh produce.  Remember, by the time a food gets to your plate, it is old (meaning it has lost a ton of nutrients) and usually sprayed with something to make it pretty on the supermarket shelf.

My local market also has grass fed beef and poultry.  I was having a conversation about allergies, and how chicken allergies seem to be springing up everywhere lately.  I noted that it might not be the chicken itself, but the antibiotics and the wheat and corn that the chickens are fed that are making these allergic reactions.    Its also important to remember, that if WE are what WE eat, our food is what THEY eat as well.    So if the crops (corn and wheat) are sprayed with pesticides and made by genetically modifying them, the soil in which they are grown is depleted and they are taking in less nutrients.  Then the cattle/poultry is fed this vapid food, and it itself becomes nutrient deficient.  By the time it gets to us, after being pasteurized and irradiated to make it safe for consumption, it is basically empty calories, although all the saturated fat remains, of course!  So if you choose to eat meat, with all of this information in hand, you have to think that the best place to get your food is from a local farmer where you can talk to them and see for yourself their practices.

Support your local market, go and meet your ranchers and your growers, and experience something new like I did at Zive Juice.  You never know what you’re going to find at a farmer’s market!

Nutrition Through the Ages Part 1: Infants to 2 years

During our lifetime, our nutritional needs change.   Of course one things stays constant, there is no need for processed foods, which contain GMO’s, white flours, and sugars, additives and artificial sweetners.  One thing that we need to keep in mind is that baby formula’s and baby cereal contain GMO’s, and currently there is a bill in the works to prevent this, but as of right now, it is not in effect.  Baby cereals as well are what I classify as processed food.  There is no reason, nutritonally speaking, to give your child cereal over a whole food.  Infant vitamins are a wonderful way to supplement any nutritional deficit.

This is going to be a 6 part post, starting with Birth, and ending with older adults.  I will cover menopause and breastfeeding as well.

Birth to Three Months:

Breast-feed if at all possible: Breast milk is the ideal food for babies and contains maternal antibodies that help the baby to develop a resistance to infections during the early months of life.
Supplements are important but if the mother has a nutritious diet and supplement regime, the baby will require nothing extra during this time.  You can also use boiled, cool water and diluted, fresh apple juice (not tinned) if
the child can tolerate it.  If colic is a problem, try drinking dill water, fennel water, and chamomile tea.  These are all excellent remedies for colic and the active constituents will pass  through to the baby in the milk. To make use of dill or fennel seed tea, use 1-T to 1-cup of water, let the seeds steep for 10-20 minutes, and then strain carefully.
If the mother cannot breast-feed, use a balanced formula. Do not use cow’s milk, which can cause gastrointestinal bleeding in infants, increase chances of a  milk protein allergy, cause kidney issues and affect fluid balance, and does not provide necessary nutrients, such as iron, vitamin C and E, and essential fatty acids. Goat’s milk is preferable to cow’s milk, as babies are less likely to develop an allergy to goat’s milk and it is easier to digest.  However, it still has nutritional deficiencies and needs to be supplemented with vitamins A, D, C, iron, and folic acid. (Speak to your pediatrician, as supplements must be used cautiously with infants.)

Five to Six Months:

At this age, the child needs extra vitamin C, A, D, iron, and B12 (particularly if the mother is vegetarian). Introduce organic cereal, then mashed vegetables one at a time. Ripe mashed avocado is excellent. If cooking, do so lightly so as not to destroy nutrients. Concentrate on whole, unprocessed fresh, organic foods. Avoid feeding the child tinned or processed baby foods, or foods that are sweet and sugary. Even organic jarred baby foods have chemicals used to seal the lids. If you can manage it, prepare your own baby food from organic fruits, vegetables, and cereals. It is often preferable to introduce a range of vegetables before moving to sweet fruits, as biologically we all prefer sweets so you may find baby prefers applesauce to beans. An excellent book for all parents is Super Baby Foods by Ruth Yaron.
Vitamin supplements may be sprinkled or mashed into foods, particularly if the mother is no longer breastfeeding.  Daily B12 requirements are small, but vital. Use supplements designed for infants to ensure accurate dosage.

Eight Months:

By this stage, the child can move on to mashed root vegetables, ground seeds, millet, and fruit. Try ground sunflower, pumpkin, sesame seeds, and almonds.  These can be ground or prepared as nut or seed milk drinks. Soak the seeds in water overnight and liquefy the following morning. You may need to strain the liquid for a young baby, but older babies can drink it as is. Add banana, cinnamon, or dates for added flavor and nourishment. Note that raw honey should not be used as some raw honey can be contaminated with botulism.  Suitable grains include brown rice, millet, oatmeal, barley, or buckwheat, steamed or prepared in a casserole, then pureed or mashed thoroughly.  Vegetables such as carrots, pumpkins, yams, celery, potatoes, and all green vegetables can be steamed and mashed.

Twelve to Fifteen Months:

At this stage, heavier starches and more protein foods can be added, try freerange eggs, seeds, tofu, sprouts, nuts, and grains. Avoid wheat and cow’s milk if the child develops mucus and coughs.

Two Years and Up:

By two years old, a child can eat a full range of whole foods with the rest of the family (except choking hazards). Introduce supplements if you have not already done so, such as kelp granules, brewer’s yeast, and lecithin granules. Avoid processed food, sweets, ice cream, and candy as much as possible.

**All of these facts were taken directly out of my school e-book from ACHS, however, as you can see from my pictures, I have first hand experience in raising a child and I would not do anything differently then what my school has taught me.  I breastfed my son until he was 6 months old.  Looking back, I wish I had breastfed longer.  My next child will be fed using the information I have gained during my schooling.   Nutrition during these developing years is so important, and if I had to pick a time in life to eat organic whole foods, this is the stage I deem it to be most important.

The 100th Monkey

The 100th Monkey experiment is one in which monkey’s were taught to wash their food in water, and when enough monkeys caught on to this new knowledge, monkey’s of the same species in many different places across the seas began to wash their food in water as well.  This is called Critical Mass.  There have been many studies conducted after this one in which this phenomena has been observed.    A scientist named Sheldrake  gave subjects a crossword puzzle to complete, during which they were timed.  Then he broadcast the answers of the crossword puzzle to thousands of TV simultaneously, and brought in a new group who had never seen the puzzle.  Timing them, this second group completed the puzzle, correctly, in a much shorter time.  You can read more about Sheldrake’s work here: http://www.sheldrake.org/homepage.html# .  Mind you, I am giving very abbreviated versions of these studies, but please feel free to Google them yourself, or simply type in collective unconscious as there are numerous papers written in Google scholar.   Below is a short video about the 100th monkey experiment.

You might be wondering why I’m writing about this on a blog about holistic health, but to me, its obvious.  I really do believe in the collective unconscious.  There is much to science that we don’t understand, but that doesn’t mean that it isn’t true.  After all, we just discovered the Higgs Boson, and we were looking for that for YEARS.  People didn’t even think it really existed, but…there it is!  And just like that, in one night, everyone was just like, “well yeah we knew it was there, of course!”

My  belief in the nature of the universe is, in part,  why I write.  If we can reach critical mass in understanding truth then it won’t need to be taught anymore.  It will just be common knowledge.   Of course, first we need to overcome this gigantic barrier that is advertising.   They don’t call it programming for nothing.  It literally is programming us to think a certain way.  When you see a commercial for a big mac, try to keep in mind what they are selling, because I assure you it isn’t food.  They are selling you childhood, they are selling you happiness, and they are good at it.  They are good at telling us that the additives won’t harm us.  They are good at pretending pesticides won’t harm us, even though the pesticides are very efficient at killing living organisms.   They are experts at deception.

As a species we need to educate ourselves on what is food.  Real food.  We need to get to critical mass.  So if you blog, keep blogging, if you share posts on social networks, keep sharing.  It makes me so happy to see so many people writing about these issues, and the many more issues we face as a human race.  I am acquiring readers from all parts of the world and I want you all to know that we are one, we are all family.  The  issues that effect me in WA, USA are also an issue for people in Iran, in India, in Australia.  And your issues effect me too.  Deeply.

I’ve mentioned before that holistic nutrition is more then our food choices.  It is our entire mind, body, and soul.  It is as much about how we exercise our bodies as it is how we exercise our relationships with the people around us.  This is why I write.  To teach, to  connect, to make a difference.  When we understand how life is  connected, then no effort is too small, everything matters.  Make a dent.

Raw “cookies” – you won’t ever want a real cookie again!

The following two recipes have been kid tested, mother approved!   The first recipe was a big hit with the kids, even people who had never tasted a raw “cookie” before asked for more.  The second recipe is a bit more of a mature taste, but my toddler ate them up regardless.  They are healthy, gluten free, totally raw and scrumptious!  Plus they are ready to eat in less then 20 minutes.

Raw Cinnamon Raisin “cookies”:

makes about 6 balls

  • 1 1/2 cups almond flour
  • 1 tsp vanilla  extract
  • 4 tsp raw honey
  • 1 dash stevia
  • 1 tsp ground flax seed
  • 1/4 cup coconut water
  • 1 tsp coconut oil
  • 1/4 cup organic raisins
  • 1 tbls organic ground cinnamon
  • 1 tsp baking soda

combine all ingredients, making sure to get everything mixed well, roll into balls and put in the freezer for 10 minutes.

Raw coconut sesame “cookies”

(makes about 10)

  • 2 cups almond flour
  • 1/4 tsp baking soda
  • dash stevia
  • 1 1/2 cup coconut water
  • 4 tsp toasted sesame seeds
  • 1 tsp vanilla extract

In a high speed blender, add the coconut water and the sesame seeds and blend until smooth.  You can use tahini if you don’t have a high speed blender.  You are going to need only about a half cup of coconut water if using tahini.  Mix all the ingredients together to until you have a doughy consistancy.  Roll dough into small balls and then roll in raw coconut flakes (I like  bob’s mill brand).  Place in the freezer 10 minutes and enjoy.
